(I did not take any photo of the soup, but from this you get the idea...)
因為天氣不太好,過了一個很居家的 Sunday。除了陪阿嬤,順便把雜誌跟報紙債通通都還清了。
(我跟 BHD 最近很有默契地買了一樣的Instyle雜誌,她是在台灣買,我是要回國前在機場買的,說出來的時候兩個人都嚇一大跳)
晚餐跟虎媽準備了一道湯,除了簡單,我覺得很適合有點涼涼的天氣。
Mom's Potato Chicken Soup (for 3 ppl, can serve maybe 2-3 times)
- Chicken: half (better with bones, already chop to pieces);
- Potato: 3 pcs
- Carrot: 1 pcs
- Golden mushrooms: 1 small bag
- Pinch of salt
1. Boil the chicken in a pot of water first (make sure you have enough water to submerge the chicken);
2. Chop the potato to large chunks (you can leave the skin or peel it off);
3. Chop the carrot to chunks too, but the size should be smaller than the potato;
4. Transferred the chicken in to another pot of clean water (the water in this pot determines how much soup you want to make);
5. Put in the carrot chunks first, leave them to cook for a couple of min;
6. Put in the potato chunks;
7. Let the soup to boil till everything is cooked and soft; Stir the soup but don't smash the tender potato;
8. Put in the golden mushrooms, separate them in smaller strands before putting them into the pot;
9. When the mushrooms are cooked, taste the soup for flavor; add a little pinch of salt as needed;
Done & Ready to Serve!
